A couple weeks ago we attended an event in Downtown New Bedford, Viva Portugal. We went to a cooking demonstration and learned how to cook a Portuguese Fish dish from Maria Lawton.
We went home that day and decided to try it for ourselves. It was amazing and so easy! Here is what you will need:
SAUCE
2 Tablespoons of Olive Oil
1 Large can of Diced Tomatoes
1 Small can of Diced Tomatoes with garlic
1 Sweet Onion, Chopped
3 Tablespoons Garlic, Minced
3 Tablespoons Hot Crushed Red Pepper
FISH
1-2 lbs Cod Fish
1 Cup Beer (I used Coors Light) (You could also use white wine or water)
Paprika
1 Bunch Parsley, Chopped
In a pan, heat the olive oil. Add in the tomato's, chopped onion, garlic and crushed red pepper. Heat on high for about 5-10 minutes and then simmer for 30 minutes but you can let simmer longer if needed.
Now that the sauce has been prepared we can start the fish. Add the beer to the sauce and heat covered until steaming. Divide the fish into 4 sections and salt. Add to the pan and sprinkle with paprika to taste.
Cover and let the fish cook for about 20 minutes or until done. Top with the fresh parsley and serve with rice, potato or pasta. Enjoy!

Chilly Weather Chili
It tends to be a bit chilly in New England this time of year. What better to warm you up than a big hot bowl of chili?!?!? I am not going to lie, I have never made chili before since I don't really like it but my husband does so I figured I would give it a go. I researched a few different ways to make it and most people prefer slow cooked chili that sits and simmers for hours. I did not have this kind of time today and needed a quick version. My chili only took about 45minutes from start to finish! Here is what you will need to begin:
1.3lbs of 15% fat Hamburg
1 sweet onion chopped
1 can of chili (14oz)
1 can tomato sauce (8oz)
1 can regular rotel (14oz)
1 can of diced tomatoes with green chilies (We like the spice you can use just a can of diced tomato 14oz)
1 package of chili seasoning
1 cup water
Cook hamburg and onion in large stock pot until hamburg is fully cooked. Next stir in the seasoning to the hamburg. Finally add the rest of the ingredients and bring to a boil. Once boiling reduce to a simmer and cover for about 20minutes. That't it, it is that simple! Now just pour into a bowl and top with the shredded cheese of your choice! ENJOY!

Lingucia with Veggies
Lingucia is a favorite in our house! I mean it is probably a favorite in all households in this area and it should be. You can grill it, make a sandwich, add cheese, grind it into a sauce, add it to your hamburg for an extra kick, slice it with some veggies over rice (as I did below) and so much more. I like the following the best as you get everything a meal should have in one quick easy dish, AND it tastes even better left over!
Ingredients:
Lingucia sliced
1 can Black olives
1 cup red, yellow orange peppers sliced
Olive oil and garlic tomato sauce (I use Bertoli)
2 tablespoons Italian Seasoning
3 cups cooked whole grain brown rice
Start by cooking the lingucia in a large skillet. Once almost cooked fully ass the sauce, veggies and seasoning. Cover the pan and simmer for at least 15 minutes.
Check the tenderness of the peppers to determine if it should simmer longer. Serve over the rice and Enjoy!
